DO NOT DEEP FRY!

  • This recipe does not call for deep frying! This chicken is flat-fried in vegetable oil. Of course, you can also use one air fryer. The recipe card below explains how to achieve this.

  • I repeat: no sloppy batter! Chicken cubes are just dusted with cornstarch. If you carefully follow my instructions, this should produce a chicken that is crispy and golden.

How Do You Cook Chicken?

  • Chicken Marination During a 30-minute marinade, combine fresh ginger and garlic with the chicken and two tablespoons of the first sauce mixture. Adding fresh garlic and ginger to the marinade to infuse the chicken with those flavors is a nice touch.
  • Use whatever method works best for you to remove excess cornmeal. I use a sieve these days. It's okay if some of the cornmeal doesn't fall through the holes in the sieve. Still, it gives you a way to get rid of most of the extra stuff and chunks that have built up in your base.
  • We don't want to cover the chicken with a thick coating of cornmeal because it could give it a powdery taste and cause a lot of corn flour to end up in the oil, which flames until you scrape it out;
  • Fry chicken in the oil of your choice. You can deep fry the chicken or shallow fried it, and cover the chicken halfway with oil.
  • Even with only a little coating of oil in the pan, it still requires rotating every piece of chicken four to six times to make all the sides crispy.
  • Remove excess coat using paper towels.
